is there a good (read: cheap) way to go from a caliper brake on the back wheel to cantis? at least, without undertaking in an amateur welding project?
or at least a way to fit a 700x30 tire or bigger?

well, if your frame has the clearance and it's just a brake issue, you could use a bmx caliper. they handle pretty fat tires.

I use a pair of the Nashbar long-reach calipers and they easily clear 32C and would probably handle bigger except for my fork and frame.

you could also try an old center pull brake by mafac or weinmann or dia-compe.

that's what someone IRL suggested to me, so i think it's what's going to be tried. My cycling team is trying to build a fleet of starter cross bikes that we can turn back in to road bikes in the spring.
