Touring - What should I pack? (loaded question)

My wife and I are going to ride around Lake Seneca in NY a Week from today.

I believe it is around 80 miles

This is our first trip over 40 miles and it will be on our own.

What should we pack?
-What spare bike stuff?
-food?
We also need to bring along:
-a pump (for her milk) I know, a little to much info
-a small bag cooler with empty bottles

What rack bag combo should I get?

maybe thin jackets, in case it gets cool

I happen to be fond of the Topeak MX setups. The bag slides and clicks into the rack, very convenient and secure -- no messing with bungees or whatever.
