That is a big question.
Vegies, Fruits, Grain, Dairy, Meats, Water.
Road riding will help. Ride up and down hills, sprint while your out riding just for fun. The most important part of any training is to have fun while you do it. If you are not having fun, you will not push yourself, you will not improve.
My training is riding on the local trails, going for a road ride a couple times a week, running, and swimming.

it's simple....
a)
what to eat: food
b)
what to do: ride a lot
go fast food is potatoes 3 hrs before a ride
go fast day-before carbo loading is taters or pasta

Few questions before I really give any answers. Reply and then we can help you more.
1) How old are you
2) what category are you in
3) How long have you been racing
4) how much time can you dedicate to training
5) On a scale of 1-10, how motivated are you to train? (don't just say 10, because trust me you're not.)

That should be the new standard in responding to all these "how should I train" posts. Pretty much sums everything the OP has to cover before anyone can reply with a reasonable answer.

At 14 and training 12+hrs/wk? Eat everything you want and feel like. The only thing I would recommend is to get lots of carbs in you w/in 15min of finishing your workout (ie, chocolate milk or you regular recovery drink, and some food).
