i am building up a bike and I only have one set of wheels with shimano hubs. i already have a full 10speed chorus group but i was wondering if i can use a 10 speed ultegra or 105 cassette on my shimano hub with the chorus drivetrain.
Yes. You should install a Jtek Shiftmate pulley device in your rear derailleur cable. The combination of Campagnolo Chorus 10-speed shifters and derailleurs and Shimano cassettes and hub work fine with the Shiftmate.

A Shiftmate will work well. The other option is to use an American Classic or IRD conversion cassette instead of a Shimano cassette.

Except the Shiftmate is a low cost, reliable fix and Shimano and Campy OEM cassettes are better than the aftermarket will-fit brands.
What make of wheels do you have? Some mfg's have different cassette hub bodies available. You might be able to swap out the Shimano for a Campy and use a Campy cassette.
Shiftmate is an elegant and inexpensive solution for your problem. Genuine Campy cassette and chain would be the best solution though. Good luck on the bike.
