I know jack about LEDs. I'm assuming that, when lit, it would emit red light. But, unlit, everything appears white. There are similar models to this by Niterider that have a red plastic cover. So, yeah, stupid question: would this be red when lit up?

If it's labeled as a taillight, then yeah, it'll be red.

Trust me, I've heard stupid questions before, yours isn't even in the top ten.
As an aside, I once used some LEDs in a project that when the power hit them one way they were red and if you reversed the polarity they lit up green.
