OK Foosters, I need some ideas for breakfast and lunch. I'm a little bored with oatmeal, eggs, turkey sausage, waffles, cereal, etc...and turkey sammiches, salads. Breakfast has to be fairly quick if I fix it at home or be something I can fix at work (microwave only). Lunch is at work and I have a refrigerator.
I'll pretty much eat about anything so throw some ideas & suggestions my way:).

Lunch: hot pizza and cold beer

Damn, and I was coming in here to mention pizza. Hmph.
You don't want pizza, you're bored of waffles (:eek:)... I'm sorry, I'm afraid you can't be helped.

breakfast: toast with ricotta and apple slices
lunch: stir fried tofu and veggies
I usually keep some chopped onions, cut green peppers, celery, mushrooms and other veggies in separate tupperware in the fridge. When I get hungry, I just splash some olive oil in a pan and what ever veggies I want, then if you have some chicken, tofu or pork cut up to cook too, that's good. at the end of cooking you can add mexican seasoning, or teriyaki sauce, then wrap it in a tortilla. Make an extra one and take it the next day to work and zap it for lunch.

Three minute idea for breakfast:
Fast and Healthy Smoothie:
1. Nuke old fashioned oatmeal in 1 cup of skim milk
2. In blender add, 1 banana, some frozen berries, splash of orange juice (with pulp), fat free plain/vanilla yogurt, 1 Scoop Whey Protein powder.
3. Now add the nuked oatmeal and milk in blender, and two cubes of ice.
4. Blend it up.
5. Pour half in a 12 oz glass, pour the rest in Thermos or your Starbucks mug and thats your afternoon snack.
Done!

breakfast: toast with peanut butter and banana slices, frozen fruit with vanilla yogurt, make your own granola bars. Get a food dehydrator. Dried fruit travels well and keeps for quite a long time.
Lunch: leftovers from dinner work well, I purposely cook more than i will eat for dinner so I can revisit the next day for lunch. I have learned to keep a few canned goods in my desk at work for the days when I just cant think of anything or need a supplement to my existing lunch.

Wow.. guess you lot cook a lot.. The only cooking I do in the week involves spreading hommus on a bagel and adding some turkey slices to it!
BLT sandwich is a good lunch. +1 on the yogurt and granola too. One of the few things that I can handle right after I wake up.
Today is no breakfast, roast beef and swiss on an onion roll lunch, and probably a breakfast taco for dinner.
We had bignets for brekkie and tofu for dinner... My first known adventure in cooking with soy solids. :)

I'll pretty much eat about anything so throw some ideas & suggestions my way:).For breakfast, I'll often have a bagel. I'll use a tablespoon of jelly, and that's where variety comes in. Right now, I have two local jellies: a strawberry habenero and crawfish. A measured amount of jelly can also add a little fun to a bowl of oatmeal. I'll have a cheese stick and/or a serving of dried fruit (apricots FTW!) and either soymilk, tea or coffee, and that's breakfast. For lunch, I've been going with a prepacked tuna product like this (http://starkist.com/template.asp?section=products/fillets.asp), a vegetable like brussels sprouts (you can get them in individual steamer bags - it's like making microwave popcorn), and some sort of bread. Add a glass of V8 and some water, and that's a meal.
Yesterday, I had a dish at a Mexican restaurant, and I can't remember the name. Served chilled, it was cubed mahi-mahi in some sort of tomato relish, with lime flavoring. There were a couple of slices of avocado on the side, and the whole thing was served with a half lemon. Very, very tasty. I'm going to try duplicating it, though I'm not sure how the mahi-mahi was cooked.
I might have to prepare a gazpacho again. I love making it, even if I'm not the greatest cook.

I used to occasionally do ricotta with pineapple chunks on toast....then discovered to be even better on tortilla shells.

Here are a couple of suggestions:
Breakfast:
1. Oat bran mixed with ground flaxseed, crushed walnuts, and dried cranberries- not your average oatmeal!
2. Whole wheat English muffin, toasted, smeared with natural peanut butter and good honey (if you have a Trader Joe's near you, get their British Muffins- they're much closer to the "real thing.")
3. Non-fat cottage cheese on top of various melon chunks, chopped pear, and other fruit, drizzled with honey and wheat germ.
Lunch:
1. Winter wheat berries (cooked, obviously :p), mixed with chopped toasted almonds, scallions, diced carrots, and dried fruit of your choice, tossed with seasoned rice vinegar, extra virgin olive oil, and coarsely ground black pepper. You can make up a whole week's supply on Sunday- in fact, I'm making this right now! (BTW, you can substitute any grain- millet works well, as do bulghur wheat and whole (non-pearled) barley.) Add some lentils (French hold up best, but wsimple brown ones will work as well) to boost the protein.
2. French potato salad- boil red bliss potatoes- in their jackets- till soft, cool, then slice about 1/8" thick. Make a dressing with white wine vinegar, extra virgin olive oil, Dijon mustard, sugar, salt, black pepper, and tarragon. Lay out the slices on a baking sheet and drizzle the dressing over the taters- then turn to coat. Let them marinate like this for an hour or so, then refrigerate. (This keeps them from breaking up.) When chilled, toss with Nicoise olives (calamata work OK too), fresh parsley. Let come to room temp before eating. Simple, and absolutely great with a good sandwich. You can add beans, tofu, or if you're a carnivore, diced salami, ham, or grilled chicken for a protein hit.
3. White bean (Great Northerns are good, but navies work well too) salad- to a can of rinsed beans (or an equivalent of home-cooked beans), add chiucks of feta cheese, roasted eggplant (1" dice), freshly chopped parsley, and a dressing made from white wine vinegar, extra virgin olive oil, minced garlic, sugar, salt, pepper, and oregano (Greek is best if you can get it). With a chunk of crusty bread, this is a fabulous lunch. No need for meat here- it's packed with protein.

Winter is coming soon and MTBLovers post reminded me...White Chili...maybe the perfect lunch with a little piece of a baguette.
Quinoa for breakfast, followed by some unsalted trail mix.
Lunch, A nice spinach vegtable salad with guacomole and olive oil and/or cheese to taste.
Breakfast, banana or any other fruit laying around.
Lunch sometimes a small can of tuna. Good Ramen or Udon noodles. I buy the ones with no Trans fats.
I got to a Vietnamese place for Pho and or a Japanese place for Sushi at least once a week.
Fruit, P,B,amd J or Almond butter and J.
Deli meats scare me. :eek:
After hard training or races I like to add some hard boiled eggs to the mix.
