I use Shimano m515 SPD clipless pedals on my commuting bike (Cannondale T700) and love them. Since the first day I put them on, I've kept the release tension set at the minimum. I've had no problem staying in or getting out.
My question is, is there any reason or benefit from increasing the tension? My LBS suggest I up the tension, but they can't give any specific reason.

Off road riding puts a good deal more shock load on the pedal/shoe connection, which is the only reason I would increase tension. If it is comfortable for you, who cares what the lbs says, they aren't riding it, you are.

Keep them set at minimum unless you sometimes click out unintensionally.

unless your lbs rides with those pedals you should keep it at your own prefence
