What size (length) fork do I use on a 52cm frame with a 121mm headtube length??? I will be using a Ritchey 1" threaded headset.

I have a feeling that the frame geometry (head tube angle, fork rake) is also a factor that you would need to take into account.

And you don't want to have a fork steerer tube that is too short. Cutting it, when the handlebar is too high, is not a big problem. The opposite is.

Perhaps it is best to consult a knowledgable mechanic/LBS first, before ordering a fork...

Measure the stackheight of your headset and add it to your headtube length. That should give you the minimum steerer tube length. When in doubt, get the next size longer... it can always be cut down..... but not too long because you'll run out of threads...

Don't forget to make sure you get the right rake, also.
