I need a crankset for a bike I'm building but I'm often scared away from Campy products simply because I don't know what they can and cannot go with...

I guess I should note that it's a Trek 1000 frame and I'm using Sora derailluers.

should be no problem if it's just a crankset. Of course you'll need the corresponding BB too.

No problem. Just buy the right bottom bracket. Campagnolo double = Campagnolo 111mm (unless it's Chorus or Record). New Campagnolo CT means you just buy the Record BB.
