I've used shellac on cork and cloth with good results, but I have some honey Brooks leather bar tape that faded and looks bad. Could I shellac the leather? Would it be a messy mistake?

Anyone?

No. Cloth absorbs the shellac, the result is almost a "cotton reinforced plastic" think Trabant. Schellac will not absorb very deep into the leather, minor impacts will fracture the schellac loose from the leather. The advantage of leather is the oil in it, and its breatheability.
