Will a bike that came with 27" wheels be able to fit 700c wheels? Something about the size of the brake calipers? I'm looking to replace several components anyway, so this is a tech issue for me.

Dave is right, depends on the bike and the reach of the brake calipers. You will just have to try it to find out.
