Training & Nutrition - My training schedule....what do you guys think?

So I just started to ride about a month ago and I'm feeling pretty strong. I'm in pretty good cardivascular shape because I ran 3-5 miles at least 3 or 4 times a week before I got a bike. I want to put myself on a schedule because I feel like that will help me see progress and keep on track as far as deciding how far I should ride, instead of just going out and doing what I feel like that morning or afternoon. Well anyways...this is my riding schedule. Let me know if you think it will be effective why and why not, if i should make any changes or whatnot. I'm very new to sport and any advice will be much appreciated. Thanks.
Monday-20 miles
Tuesday-Rest
Wednesday-25 miles
Thursday-20 miles
Friday-20 miles
Saturday-rest
Sunday-35+

I forgot to put my down my question but my main question is about rest days.
so as you can see my training schedule above has a day when I ride 25 miles and than the next day I'll ride 20 miles....is 20 miles low enough for my body to recover or should I do only 15 miles? I just think that if I only ride 15 miles than I won't feel like I did much of a workout or ride. But I'm all new to this so I'm very lost.
I'm also very new to road bikes and I'm also in excellent cardivascular shape.
Here is an average of what I've been doing for the last couple of months. Actually not far off what you are doing
Monday-15 miles (slower pace)
Tuesday- Rest
Wednesday-25 miles (today I did 35 miles)
Thursday-20 miles
Friday-10 miles (very fast pace)
Saturday- 40 to 45 miles
Sunday-30 to 35 miles
This is what has been feeling good to me, although I really need to buy a book and or training video and get all the input I can. I know I can also do some searches in the bike forums archives which I know will really help. Too many things for me to learn and too little time :(
Rest days, interesting question, I would think it depends on how hard you are training. I've seen in many other previous posts that we all need at least one rest day. I've talked to many riders who say they have 2 to 3 because of their schedules. I'm sure some bike vets will join in here.
Brings up a question for anyone who reads this. I'm hoping to do a metric century by years end. How long did it take most to acheive a metric century and a reg. century? Just wondering.
