A couple hundred miles a week, consisting of a variety of different types of cycling, might be a good start.

Work up to a couple hundred miles a week; don't try to start there. You'll just hurt yourself and give up again.
Other than that, it depends is the correct answer. What is your current physical condition? What kind of bike do you have? What kind of racing do you intend to do? What sort of terrain do you have available? What is the airspeed velocity of an unladen swallow?
