not sure if this has been done but here;s goes, lets assemble a list of recipe's you like that are healthy AND tasty.
here are 2 offerings vegan friendly, which is how I've been eating a lot as of late.
soy milk shake:
4 cups soymilk
2 frozen bananas
4-6 frozen strawberries depending on size
throw it all in the blender, blend till smooth and enjoy.
this is a good one for when you get those ice cream cravings.
1 can of unsweetened coconut milk*
1 tablespoon raw sugar.
heat the coconut milk and dissolve the sugar in the coconut milk
pour into ice cream maker and let blend until it thickens.
*you want to buy unsweetened coconut milk because the sweetened stuff is sweetened with high fructose corn syrup
what about the rest of you, what do you like?

i'm down for this! at the moment i'm kind of hooked on baked pasta with a white sauce which i meake from melting some lf cream cheese and then adding in some grated parmesan, i will stir in some cooked up chicken (don't buy battery chicken!) which i have previously grilled (before grilling i season with sage and salt and pepper), it's really good.
i also like to fry a bit of lamb up with some onions peppers moroccan 35 spice mix and some sweet poato then add a bit of water or coconut milk to make a sauce, if using water i thicken with cornflour. i serve that over a grain

that sounds good, here's another one I like a lot,
stuffed bell peppers
4 large bell peppers (red, yellow, or green)
1 medium onion
3 cups cooked brown rice
1 large can of tomatoes (or fresh as I prefer, 1 large fresh tomato does fine)
1 can of black beans
1/2 cup of grated cheddar cheese
Preheat oven to 350 F.
In large bowl mix cooked brown rice, diced onion, beans, and tomatoes. Salt and pepper to taste.
Cut off tops of peppers and clean out the insides. Stuff with mixture. Sprinkle grated cheese on top.
Pour 1/2 cup of water in a shallow casserole dish and place stuffed peppers in this. Cook for 30 minutes or until peppers are tender. This is a great maindish.

peanut butter and banana stuffed fench toast
take 2 bits of bread, spread both sides w/ pb and add 1/2 a sliced banana then pop it in the otasted sandwich maker, in another bowl combine 2 eggs and some milk(or 3 yolks 1 white for richer custard), vanilla extract and some sugar when the sandwhich is nicely browned remove fromt he breville machine and allow both sides to soak up the custard before BAKING in the owne at about 200 centigrade 'till done
i also really like having some drained tagliatelle mixed with sauteed mix mushrooms 2tbsp of creme fraiche or fromage frais a good grating of parmesan and maybe some sauteed panchetts - its a 10 min carbonara

Before a longer ride, I will have PB and banana on toast. It probably is a mental thing, but it really seems to help me get through it easier.
I am not good with an actual recipe, because I usually don't measure things, nor does my wife. I really like making southwestern chicken egg rolls, but my wife and I have decided to not do all the roll up time, and just use wheat tortillas and I have been leaving the chicken out some times.
Basically it is black beans, corn, chicken (if you want it), frozen but chopped spinach, diced red pepper, diced jalapeno pepper, diced bell pepper, diced green onion, and then we add chili powder (pinch) and cayenne pepper to taste. We heat all of this up, and have it all mixed together, then when it is warm, we add Monterey Jack cheese and let it setup for about 15 minutes on a very low setting to just keep it warm. Then we put it in the fridge and eat it whenever we want a small snack or even a meal.
We don't fry the shells or anything like that. We will roll them up in egg rolls for company and bake them in the oven, but we usually will put them on a tortilla, and then place another tortilla on top of that and then bake it in the oven.

i have also been eating a lot of smoked haddock grilled simply with a risotto made simply by sauteeign onions and garlic in evoo then add rice, then gradually adding fish stock one ladelful at a time then at the end incorporating spinach and parmesan, maybe some creram, serve with haddock (crispy skin upwards) and a poached egg

This is a vegan recipe, it works exactly the same if you use meat sausages though:
8 thick vegan sausages
Some cooked lentils (brown, green or both - maybe about 100g dried lentils)
An onion, coarsely chopped
2 cloves garlic, crushed with the palm of your hand
A couple of handfuls of mushrooms, cut in half
Some herbs (sage, rosemary, thyme)
A squeeze of tomato puree
About a teaspoon of marmite or vecon vegetable stock
Some ale (I used Black Sheep Ale - it is vegan)
Fry the sausages in oil in a large frying pan on a high temperature until brown. Add the onions and turn the heat down slightly.
Once the onions are starting to brown, add the mushrooms, and after a few minutes when the mushrooms begin to release their juice, add the garlic. Do not chop the garlic, just crush it with the heel of your hand.
After a couple more minutes add the tomato puree, stir it in well. Now turn up the heat and add the ale.
Once the ale begins to bubble, add one teaspoon of marmite. Taste the sauce to see if it is marmitey enough. It should be, you shouldn’t need to add any more unless you’re some sort of marmite freak.
Now, add the lentils. Cook for a little bit longer, then stir in the herbs if you’re using dried herbs. If you’re using fresh herbs, throw them in later. Grind some whole black pepper and chuck that in too.
Chuck the whole lot in a casserole dish and bung it in the oven on 190°C for about twenty minutes or until the sauce is as thick as you like. Now throw torn fresh herbs all over it and stir them in (if you’re using dried herbs, put them in before you put the dish in the oven).
Serve with mashed potatoes and peas, and a bottle of Black Sheep ale. Yum yum.

I also really like healthy fish or chicken and chips which i make by taking apotato nand chopping it up into chips then microwave for a minute, pat the chips dru then bake in the oven for 30 mins at 200 then when that's in I take a filet (even salmon works) dipping it in egg mix then in breadcrumbs - seasoned with appropriate herbs/spices (for chicken i use salt pepper, cayenne, allspice and chilli) then back to eggs then back to crumbs then bake in the oven with the chicken 'till golden serve with mushy peas

that sounds good. i found a nice recipe for cous cous stuffed bell peppers, I'm gonna try it tonight, if it works well I'll post it up here. lets keep this going people
