I got the five pack of the CTS videos (sprint, climbing, time trial, crits, mtb) to make spinning indoors a lot less dull and more effective. From what I've read, you shouldn't be doing intervals two days in a row- so does this count for the DVD workouts on a trainer as well?
The steady state intervals on the time trial video are absolutely killer so I'm pretty sure I couldn't do those two days in a row and maintain the same power. How would you guys mix it up?
I got my license and I'm committed to racing this year- crits and a few time trials.

The CTS or spinerval videos are an excellent way to mix it up throughout the winter. As far as intensity on back to back days, it depends upon your current fitness and goals. Right now I use spinervals (similar to the CTS videos). I do Tough Love (3 hours of mostly LT work) the next day I do Have Mercy (2 hours of 30sec, 1min, and 5min intervals). I also mix it up with totally time trial, uphill grind, and big gear strength. If done at the correct intensity, the videos are an amazing workout. I wouldn't bother with any of the videos that are rated less than 8 or 9 out of 10. As to the specific combination of weekly workouts, it depends on your goal races. As a crit racer, you'll probably end up doing a few crits back to back. This early in the season, I would do whatever allows you to get the most out of each workout. If your tired after one day of hard intervals, rest.
