About 10-years ago, I was using CodeWarrior. Nice thing is it can compile for both Mac and Windows environments. Nowadays, we're mostly using Xcode. For a lot of the ported X11/command-line stuff from the UNIX community, I'm doing straight C/C++ with GCC4.
Applescript and 68k Assembly is the only way to fly.
I just use velveeta and some milk.
XCode seems like the standard, mainly because (please correct me if I'm wrong), it ships with all Macs.
Before that, it was CodeWarrior.
Before CodeWarrior, Think C/Think Pascal.
