Touring - Are these vintage rims strong enough for touring?

I posted this in the vintage forum but got no responses.
So I will try it again here.
I've had these forever. I was originally going to build a set of wheels for my now long gone Miyata but I always went back to 27x1 1/4. In fact all my touring bikes except for my new Rocky Mountain still have 27 inch wheels. The tire selection was better for 27 inch wheels way back then and I did a lot of gravel road riding.
Now that I am building a vintage touring bike for my son, I am going to run a 700c wheel set. And these are the only rims I have. They are brand new and weren't cheap rim but I also didn't know what I was even buying back then.
So, anyone had any experience with this type of Araya?

Araya was a good Japanese rim company long ago. It's hard to tell from the picture what width the rims are...they seem a little narrow...but they should do the job. It's not like they have a 'sell by date';) Build 'em.

They are about 3/4 of an inch wide on the outside.
Maybe they are a bit narrow.
What would be the max size of a 700c tire on a narrow rim like this?

The all time best rim ever, yes sirree, was the MA2 which is in the 20.5mm range.

Are those the right kind of eyelets? I am eyelet challenged, but at that price, vintage, they should be the double eyelets, and it ought to be possible to really tension them up.

18-19mm would be on the narrow size of narrow, don't know what size of tire that would be, but if you can mount 37s on rims 1-2 mm wider, you might be ok with 32s. The sole set of MA2s I have are actually ones intended for 2" tires so as long as you can mount them...

I'd say a 28 to 35 would be doable. I never worry too much about width on road rims (although you can't pressurize them as much as you'd like) because I run 2.1" tires on mountain bike rims that are nearly as narrow as those. If you go with a 35, don't go crazy with the pressure. I have 37mm on Mavic A719 and I've blown them off at around 90 psi. Not good when the next bike shop is 120 miles away:o

The outside width is 20mm.
The inside hook to hook is 14.2. They are pretty narrow.
I guess a 32 would be ok, but then the pressure will be around 60-70 so it should be ok.

I have a front wheel with those rims on it, gold colored but identical sticker. No problems so far, good wheel.
