Even long ago when I was a thin 170 (6' tall) my thighs hit my lower ribs when I had my seat set at the proper height., Now, at 215, my legs hit both my ribs and belly. So I can sit more upright or do something else. Since I am sure at least some of you have this problem, what do you all do? I'd really like to be more aerodynamic on the bike but it seems I just am not built to be one of the flat back riders.

Sounds like the top tube is a bit short for you and getting you a bit crunched. I take it you're one of us that has a long torso as compared to leg length?

Nope, I am just the opposite. At 6' I have a 35" cycling inseam. Kind of a short thick torso.

Hmmm, OK, well that too wil contribute to the same problem. If you've got a modern stem and have it flipped to the down position, flip it back to the upangled position and you'll likely be more comfortable.
