We presently have WTB 2.40 MotoRaptors on our Ventana and have used a variety of other tires, the narrowest being IRC Mythos XC 2.1s. On the basis of our experience, I would have to say that for general purposes and when fame and fortune aren't on the line, the bigger the better.
The Mythos 2.1s are what came on our '98 Cannondale and they were fine for hard-packed soil. However, once you hit slick rock, loose soil, mud, or sand you were done. The bigger tires quite simply give you a bigger footprint, more bite, and floatation which is really what you need on an off-road bike that's carrying a lot of weight and has massive understeer / push when cornering hard.
