Saddles are like shoes. Something that fits my ass won't necessarily fit your own.
That said, selle italia prolink gel-flow saddles are quite comfortable but I find rolls, turbo and some fizik saddles about as comfortable as sitting on a brick.

I have a fixik Pave CP3 and it does not fit my arse. If you want it I'll sell it to you.
For dirt riding, on a 'cross bike or a MTB, I used the old WTB SST series. I prefer the SST 98, but it was a limited edition and is hard to find. The shape is just perfect for me arse, it has a nice nose that won't catch on yer shorts and it can be found through craigslist or ebay for pretty fair prices. Find one with ti rails and you're set.
Then again, I have a Brooks B17 arse for touring ;)

in general, i prefer saddles that are harder because if they fit me correctly they'll put most of the pressure on my sit bones and after long periods in the saddle i find padding can cause discomfort from spreading out the area of pressure. so i generally use saddles marketed as "road" saddles for everyday riding, even if it's offroad. i get my shock absorption from padding in my shorts, fat tires, suspension etc.
in cross races, however, i'm never in the saddle for more than five minutes at a time and since i'm jumping back into the saddle i like a little padding. so for racing i've been using a mountain saddle and it's suited me well.

For racing, pretty much anything light will do. Cross races are short.
For off-road non-racing on a cross bike, nothing beats the comfort of rear suspension.

Specialized, Specialized, Specialized.... I ride the phenom on my cyclecross and my mountain bike and the Toupe on my road bike; they're very comfortable. They also come in 3 different widths to accommodate different sit bone widths. Your LBS should size you up and sell one to you. As long as you don't crash it or beat it to s**t you can exchange it if it doesn't suit your needs.
