Network to find someone compatable with. Probably far more opportunity with the variety of rides than the handful on this forum.
Groups:
Florida Freewheelers - probably the broadest range of riding styles, concentrate on A/B rides if in shape, or slower rides to build up, or like me - take off with the A/B kowing will be dropped in 10 miles, leisurely ride as C's catch up. http://www.floridafreewheelers.com/index.php

On the west side, http://www.windermereroadies.com/ Also on their web site see links to area clubs and race teams.

On the east side, the Lakemont ride(s) sponsored by Loco-Motion LBS. http://locomotionbikes.com/

Another LBS is http://www.glorycycles.com/ Uncertain about sponsored club type rides, but the owner (and employees) has a racing background and sponsor 3 teams.

That should be a good start.

Also, With your living in Apopka, check out some of the Mt Dora and Clermont rides on the Freewheeler site. Nice rolling hills through the countryside. I am over on the east side near UCF where it is flat.
