How often should i be servicing or overhauling or whatever my pedals. They are the Shimano Ultegra road pedals.

If there's no play in the bearings and the axles spin smoothly, leave'em alone. They're sealed well, aren't subjected to all that much force, and are a pain to put back together and adjust.

I panicked, decided that my Ultegra pedals needed overhauling (for some reason I destroy bearings on bikes). I ordered spares axles & bearing assembly at stratospheric prices, plus the special wrench needed to remove the axles. Fortunately the wrench arrived first, and when I opened the pedals up after 1.5 years of all-weather (ab)use they were clean & shiny. Not a mark on the bearing races! I cleaned & re-packed with fresh grease and put them back together.
Luckily the spares never arrived, and I was able to cancel the order. These are very well made components, using high quality materials and very good design.
....they will be fine for years!

I used to do my Dura-Ace pedals every season. I don't think I ever saw contamination in 3 or 4 seasons.
I don't bother now, it's too much effort for the price of the pedals (spread over several seasons...). I agree with the above, adjust bearings if needed (or possible) and ignore if they spin smooth.
I will probably do them this year (that's after 3 seasons riding and 4 in storage).

If it ever came down to rebuilding my Ultegra pedals, I think I'd kick em to the curb first. They just seem a little slow, difficult, and clunky clicking into for me.
