Touring - Riding routes in Southern Spain or Southern France. Got any?

Bikeforums.net is a forum about nothing but bikes. Our community can help you find information about hard-to-find and localized information like bicycle tours, specialties like where in your area to have your recumbent bike serviced, or what are the best bicycle tires and seats for the activities you use your bike for.
I am planning a trip with the family to Southern Spain and Souther France in Sept. Been there before, but not riding. I want to take my bike and ride everyday there. I figured if I am out by 6 AM or so, I can get in 3-4 hours of good riding before I have to be back with the wife and kids to do the rest of the day as a family. I would be going solo on my rides. We don't have plans on specific locations yet, but I am very open.
Please give me links to any routes you may have already drawn in south spain or south france in places like mapmyride.com or others.

The Pays Basque region has a lot to offer and the cycling is great! It also offers a lot of culture, mountains, beaches, food and history to keep the family occupied. I had a great time in Bayonne and it is not a touristy as St Jean de Luz or Biarritz making it a good base. Also you can cross over to the Basque region of Spain and do trips to San Sebastian and other places along the coast.

I reckon a ride from Provence, along the Cote'd'Azure to Barcelone would be fantastic. I got to Marseille and turned North, but I imagine it would be just as spectacular the whole way.
