I don't wear headphones when commuting because I am paranoid about missing key sounds, but sometimes when I am recreational riding on wide, empty paths I listen to a lot of Beck.
Various forms of electronica. Mainly EBM and industrial.
Groups like Unter Null, Funker Vogt, Android Lust, VNV Nation, Rotersand, etc

1. It's only a matter of time before this thread gets attacked by the people who hate the fact that you can enjoy music while riding. To those people; I understand the safety issue and do not ride with headphones on during traffic, I prefer to use some sort of speaker device that enables me to hear what is going on around me, but at times I will use 1 headphone or even both if I deem it safe.
2. Riding with music pumps me up a lot and has brought me back in from the bad side of a bonk on more than one occasion. I've learned that I need to set up my MP3 player with all softs of music for different types of situations. Calmer rock for the slow flat nature trail, Killswitch Engage, Pantera, etc for climbing that big @55 hill, and plenty of various stuff to choose from during the ride. I've tride to make a "ride playlist" but have never succeeded when trying.
A tip for those who have tune trailers, stereos, etc on your bike. If you're riding in a group and having trouble getting up hills there are 3 magic songs to lift spirits. Kenny Loggins - Dangerzone (TOP GUN!), Vanilla Ice - Ice Ice Baby, and MC Hammer - Hammertime.

It was mostly the avatar. I would completely recommend Hocico as a group to consider putting on your list :) but you might have already checked them out and hated them, or just not listed them.
Personally, I really like listening to a mix of industrial, chill, world-flavoured electronica, and punk.
