Another question regarding my Raleigh Twenty project. The old chain is the standard fairly heavy duty chain, which I presume would normally be replaced by a BMX chain. I've got an unused 8spd chain knocking around the house, would this work with an SA hub and single chainwheel or are the plates likely to be too close?

Dan is right; the plates of a 3/32 chain are probably too close together for your cog and chainring, but you can trivially test whether this is true -- set the 3/32 chain over a couple of teeth and see whether it snags or binds.
