Who'd have ever thought.

A few bits of crumbled, rotting cheese, swarming with bacteria, could turn a boring dinner salad of Greens and Tuna, with Olive Oil and Balsimic Vinegar into a tasty meal.

That sounds so delicious.

I made this a couple of weeks ago for a work retreat potluck.

Beet Salad with Gorgonzola


3 lbs beets, roasted, peeled, & cubed
1 bunch scallions
1/2 cup gorgonzola, crumbled
1/2 cup chopped walnuts
1 large red onion (I used half of one)
6 oz champagne vinaigrette (Such a prepared dressing exists, but I plan to learn to make one myself. You'd need champagne vinegar.)


First chop & slice ingredients. Then in a large serving bowl, combine beets, scallions, walnuts, cheese & red onion. Drizzle with the vinaigrette & gently toss.

Gorgonzola cream sauce. If on pasta, go lightly. If on a steak, then you must've overcooked it.

There is a little burrito place in San Mateo that I enjoy one of their burritos that has gorgonzola cheese...

I also like Feta as served on some pizzas at Rainbow Pizza.

Good stuff!!!

I need to try some of the other ideas presented here.

I took a grilling class a while back that made a dessert with marsala marinated pears grilled with a small dollop of gorgonzola added in the center afterwards. It was something I never would've considered on my own but man it was fantastic.

Feta cheese, thinly sliced, granny smith apple, sliced not quite as thinly, Carrs Table Water Cracker with cracked pepper, in that order rrom top to bottom. Eat and enjoy.

1. nuts should never be mixed with salad.

2. sweet and savory is just plain wrong.

3. walnuts should never be consumed. they look too much like cockroaches.

1. incorrect, pine nuts, walnuts, peanuts, sunflower seed kernels all have their place in salad lore.

2. incorrect, you should think about going into food comedy, that is golden stuff there.

3. incorrect, they should be eaten because they taste rather nice and they look like tiny, malformed brains.

I am not a big fan of sweet and savory together, but there are enough exceptions that I am willing to try many things. However, I don't like nuts in salad, and I strongly prefer tangy over sweet... Other than 1000 island dressing for some reason.

I like a good slice of hot apple pie with cheddar cheese melted on top. :D

Last time with Gorgonzola - had some friends over and I did some nice steaks on the grill and, after having a similar steak in the restaurant, crumbled gorgonzola over steak and let it melt - yum.

Unfortunately, I learned the difference between "light crumbling" and "handful". Ugh, I put too much on and ended up scraping it off after I had a mouthful of molten gorgonzola. Stuff is not cheap either. Great stuff, but not in large quantities.

1. Nuts are seeds in essence, as they are fruits that contain seeds. Pecan trees grown from pecans, oak trees from acorns, etc. Peanuts are actually legumes, almonds are drope fruits.

2. to each his own.

this is getting very confusing.
