Touring - Touring Nutrition or am I eating enough on tour?

Does anyone else have this same experience? When I return from a self-contained tour of a few weeks or so I always feel like I want to eat and eat and eat, overeating for a week or two til the feeling settles down. It's not really motivated by a feeling of real hunger. Is this psychological or is it a sign of not having eaten enough during the trip?
I am interested to see what other people eat during an average day of riding while on tour as I am thinking about if and how I could consume more calories each day. (Being a vegetarian makes it a bit more challenging though I do eat dairy products.) How about listing what you eat on the road in one day starting with breakfast and working through til night.

The best place for touring cyclists to visit are bakeries. Bread rolls and things have lots of carbos, and I don't see any reason for a vegetarian to avoid them. Another thing I eat is lots of fruit, especially bananas.
You should expect to be eating more on a tour than you would normally simply because you will be cycling more miles. Think about it, do you ride 80-100km/day when you're not on a tour? Therefore, you should be eating accordingly.

Absolutely! I have experienced this phenomenon often too and never quite understood why. Anyway, you are not alone.

When you are touring or racing you could be burning more calories than you can take time to prepare and eat, especially if you are using solid food. You could be burning as much as 8,000 calories a day. I've been there myself, I was ridin man! I ate what I had to! I was too stoked to think about eatin' until I got off the bike and turned into a HOG. Try some liquid food, like Enervit products or Hammer Gel, you won't have to stop to get fueled
