Cycling France by Lonely Planet. Seems it was Ulysses Books also has a good cycling guide about France.
Heading towards Toulouse. Ride up the Midi Canal from Beziers to Carcassonne and on to Toulouse. Peaceful, quiet cycling. Don't miss it.

I just ran across this site with great bike maps for different parts of France.

I purchased a few for my upcoming trip in May. I'll report on what I think of them once I get them.

This page has 52 links to bike touring in France information (http://www.biketouringtips.com/searchTips.html?country=France&state=&place=&id=&subtopic=). Not all of them will be of interest to you, but you will find lots of good stuff there.

Yes, the Canal du Midi is a fantastic bike ride. BEAUTIFUL scenery, not a car to be seen for over a week! :)
