Does anyone know of a good site or sites to find a somewhat complete list of rides. I am in the Portland area and generally look for things that start within a 100 mile radius.

Try the BF local forum or join a local club. The US Cycling site will have a list of clubs in your area.
Rides that come immediately to mind are MOnster Cookie in Salem, the STP (Seattle to Portland) and the Cycle Oregon tour. Mostly they come to mind because those are the ones I'm planning on this year...go to a nice shop like River City Cycles and peruse the flyers/pamphlets in the vestibule, and check out this site:

I forgot about that board completely. I do belong to a local club. Problem is all their rides start on the other end of town from where I live and most are on Saturdays. I work Saturdays. This Is fine though as I have low traffic scenic routs that I can ride all day out where I live. I am mostly looking for longer events to keep me motivated in my training.

Monster cookie: "is generally flat with a few short hills" I like generally hilly with a few short flats :D
STP: "largest multi-day bicycle event in the Northwest, with up to 9,500 participants " Too many people for me. I generally look for events that are 1000 people or under.
River City Bikes: I practically live there. They are only 2 blocks from my shop. In fact I just purchased a new touring / winter / commuting bike there about 2 weeks ago a Canondale T-2000. Come to find out when I looked up the purchase date of my last bike it was a year ago to the day from when I purchased the new one. Hmmm ... strange coincidence or cosmic event?

All three Salem Bicycle Club "event rides" are on Sundays. I'd describe the Peach as rolling (unlike the Monster Cookie).

Did the Hoo Ha last year, but this year I am informed by the wife we are going to the Phantom Of The Opera that evening. Last year it was get up at 4 am, drive to the ride, do the ride, make the 2+ hour drive back home. If I did it this year I would be sawing logs during the Opera for sure. I have a ride in June ( Tour De Blast ) and one in September ( High Pass Challenge ) so far. I would like to find one or two more for the summer.

There's the 7 Hills of Kirkland (Memorial Day), The Chelan Century Challenge (If you're not already registered for TdBlast, since Chelan in June 14th.) If you're not already registered for HPC (I think it's closed out already) there's the Ride 542 Mt. Baker Hill Climb and they've brought back the D.U.M.B. ride (Down and Up Mt. Baker: 2 laps, 10000+ climbing)
I always enjoy riding the RACC in early May. The weather isn't always ideal, but it's a beautiful ride. Here's what the official description has to say:
100-MILE LOOP: Loop travels east, around Lacamas Lake, then north through the Hockinson hills to Battle Ground, continuing north to Yacolt & Amboy. Riders then head west on a new route through the scenic Cedar Creek / Lewis River area, and south through La Center (revised route for safety) to Daybreak Park. Riders proceed west toward Ridgefield, then south through Felida and back to the finish at Clark College. (4,800 ft. elevation gain)
