Supposedly the Dingle requires a 9 speed chain and the White double uses an 8 speed chain. Does anyone know if this is just a recommendation or can one chain work on both. Sheldon Brown (http://sheldonbrown.com/speeds.html) says that a 9 speed chain can be used on older chainrings, so is it possible it will work just as easily on the White freewheel? Anyone have any experiences with it? Thanks!

Use 9 speed chain, it will work fine on the WI freewheel.

I have used an 8sp and a 9sp chain on my WI double and it works fine. You just don't want to use a 10sp chain which is thinner than 8/9sp chains.

I'm currently using a 1/8" z-chain on my WI double and it seems happy enough. Am I in for a surprise down the line?

No, but since the teeth are 3/32" you may have a tad more play in the cog/chain interface which *could* introduce expediated wear.
