Im about to head over to Italy.
Im attending a highly recommened camp called Camp Dolomites where im going to get myself conditioned to ride the most famous passes italy has to offer.
Im planning on doing the following passes:
Giau, Pordoi, San Pellegrino, Lavaze, Gardena, Sella, Pampeago, Rolle, Stelvio, Motorolo...
Have i left out any others that people have riden or know about?
Be nice to have some ideas of other places

From photographs, the Gavia pass looks amazing. It's near the Stelvio.

I suggest You the Dolomites region: Stelvio and Mortirolo (not motorolo ;-))
Have a look on these other tour ideas:
Niederdorf/Toblach – Sillian (approx. 25-50 km, 800-1500 m difference in altitude)
Sillian - S. Stefano di Cadore (approx. 45 km, 1000 m difference in altitude)
S. Stefano – Sexten (ca. 50 km, 900 m difference in altitude)
Sexten (approx. 40 km, 800 m difference in altitude)
Sexten - Cortina d’Ampezzo (approx. 55 km, 800-1000 m difference in altitude)
Cortina d’Ampezzo – Niederdorf/Toblach (approx. 40 km, 900 m difference in altitude)
For a low but unique pass, check out Passo San Boldo (http://www.aukadia.net/alps/east/bold.htm).
If you head into Slovenia, Vrsic (http://www.aukadia.net/alps/east/vrsc.htm) is highly recommended. It is very close to Italy and the scenery is very similar to the Dolomites.
Monte Zoncolan (http://www.aukadia.net/alps/east/zonco.htm) is one of the steepest passes ever done in the Giro so if you're looking for a knee breaker to rival the Mortirolo, this is it. (Haven't done it though.)
