I'm going to buy a 58 Surly Long Haul Trucker, but I want to know if I can run 26" wheels on it (on the off chance that I --- oh, I don't know --- want to go off road on the widest tires).
I know it comes standard with 700c wheels, but just seeing what my options are.

nope, you're more likely to smack your crank against the floor and the brakes don't line up.
Why not a karate monkey? you can fit 2.1" wide 29'er tyres on that.

You can go offroad on 700c tires. Just get 700x37mm tires and you are set.

I believe the complete LHT comes with 37mm wide tires already. You can fit tires up to 45 mm wide according to Surly. Just get some cyclocross tires and roll!

I forgot abut the crank. I figured that one could go with disk brakes it it had the mounts.
I have been thinking of building a 26" commuter/tourer. I keep my eyes open for a late 80s/early 90s MTB with a steel frame which I recall generally had standard road geometries.
