There is a clown, I mean redneck I pass every morning. It says across the windshield of his hillbilly truck that sits about 12 feet in the air, in big letters, "I LIKE BISCUITS".

Evidently he does by the size of him.

Anyhow, down here in the south biscuits and gravy is a concoction of sausage gravy (the bigger the pieces the better) gobbed over biscuits. Some call it redbone. Bob Evans has it on their menu but the best you will find are at small independant hole-in-the-wall places.

It's like adding more grease and starch to grease and starch: It must be twice as good.

That said...I don't care for biscuits and gravy. Seems to me like something left over from dinner at Cracker Barrel someone's trying to pass off as breakfast.

No idea why it's so good to me, the gravy adds moistness to the biscuits, the sausage adds awesome flavor.

Edit: Biscuits were always meant to be an accessory to other food. As the Good Book says, "Man does not live on biscuits alone."

That said, I've had some downright lame biscuits and gravy. One place nearby has some great gravy, but the biscuits are basically hardtack, and they pour all the grease (and then some?) from the sausage in the gravy. It doesn't just clog your arteries. It clogs your intestines even. Also, most places serve bland gravy, usually some kind of whitesauce rather than a true gravy. No bueno.

botto! B&G is a basic staple!

You need to get it from someone that uses cream as the gravy base though to truly get good Biscuits and Gravy. An acceptable substitute is whole milk, but not as good. Light, homemade buttermilk biscuits are also a must and top it off with a brace of 3 over easy eggs. :D

So basically the southern diet is mostly food the is either ok normally or very bland, and just dump lots of fat/grease/sugar in/on it, and call it a eatin' good.

Ingredients:

3 cups all purpose flour <Starch
3 teaspoons baking powder
3/4 cups buttermilk <Milkfat
1 teaspoon salt
3/4 teaspoon baking soda
3/4 cup Crisco shortening <Grease

SAUSAGE GRAVY:

1/4 cup sausage drippings <Grease
1/4 cup flour <Starch
2 cups milk <Milkfat

In that case almost everything that has fat in it can be considered greasy???

Botto, I suspect you ate substandard gravy. Gravy making is a dying art. That said, I prefer my stepdad's biscuits with just good butter on them. The gravy tends to be a bit too rich for me. I did use some leftover Christmas goose gravy with biscuits once & it was rather good.

I live in Canada now, cant find a place that has B and G. I had it once up here, sad little pieces of hardtack with hotdog bits in the gravy. Good thing I was drunk.

If you stop there, you might see the owner's coq, sitting on the bench in front of the store.

I prefer to use a slice of Texas toast for gravy sopping. A biscuit at breakfast time is meant to be cut open, dressed with butter, grape jelly and either bacon or patty sausage. End of discussion.
