Road Cycling - Rides/shops in Castle Rock and Longmont, CO

Headed north for Turkey day and want to avoid a total lazy-fest if possible, so I'm taking the bike. Staying with family and friends in Castle Rock (actually Castle Pines, but that's just a couple of miles up the road) and Longmont. Anyone suggest some good roadie rides around those places? Probably some 40-60 mile rides, some climbing is expected. It's late November, so I'm not gonna be in a hurry, but I'd still like to get on the bike for at least a couple of days.

From Castle Rock head out Crowfoot Valley Road (east of I-25 off of the parkway that goes by the Target - turn left about a mile after the Target) go to Motsenbocher north, turn right at Stroh Road, right at Parker Road (Route 83) - ( a bit scary) go to Franktown, turn right on 86 by Castlewood Canyon and head back in to Castle Rock.
Beautiful scenery, pretty good roads.
Current temp is about 30F and snow on some roads.
Or go west a bit to the road which connects Sedalia to Wolfensburger Road (famously steep) and go south. Can;t remember right now, but I think it is route 103?? ALso beautiful. You can try Wolfensberger if you want, but steep and narrow and lots of cars. Will take you back to Castle Rock.
Not generally a good time of year to ride in the mtns.
Lost of places to ride.

Yeah, there's already snow on the mesas around here so I know the mountains won't be rideable (at least, that was my assumption.) But, I know there are probably some places in the foothills that won't be bad. Thanks for the suggestion. How's the shoulder on 83?

There is one section with practically none - a couple of miles. Otherwise OK
