If we're talking road bikes, the 30, 40, 50 mph motorpacing scene from Breaking Away is my pick.

Probably the highly accurate Alamo basement scene in the highly regarded Pee Wee's Big Adventure.

For road bikes...Breaking Away, for bikes in general it's hard to top how famous the scene from E.T. is.
