Howdy-
I'm going to be visiting NYC, from SoCal this M-F. Are there any morning group rides (racer type training rides)? Also on Weds I have the day to myself and would like to get in a longish 70ish mile ride, any suggestions? We're staying in or near Chelsea. Any other tips or "must do" rides?

Check out the "unemployment ride" which is one Tuesdays + Thursdays. It's not a hard ride, but if you ride up to the start in Westchester, you will get a lot of miles in.
Wednesday I would recommend doing an epic ride on both sides of the Hudson. Cross the GW Bridge, ride up 9W to the Bear MTN bridge, cross it, and come back on the EAST side of the river. An excellent cue sheet can be found here http://www.roberts-1.com/bikehudson/r/r/gwb_bm/map/index.htm
I've done that Route a number of times. It's beautiful, challenging, and beautiful. From/going back to Chelsea, it would be 100+ miles.
Enjoy the city. Remember to watch out for Gypsy cabs. Remember, the longer the radio antenna, the more dangerous the car. :)
Also post your query to the New York Cycle Club message board (www.nycc.org). There are fast rides in Central Park early in the morning, as well as in the immediate suburbs.
New York Cycle Club www.nycc.org is your best bet for an organized weekday ride though most of next weeks rides have not been publicly posted yet. Early morning in Central Park you'll find lots of riders doing laps along with teams training. I should say very early 6am or earlier as the park drives open to traffic from 8am to 10am
