I have really enjoyed taking my little cigarette package-sized Flip Camera from Digital Image on my rides.
I post the ride videos on my blog, e-mail them to friends and generally document most training rides. The camera does a surprisingly good job in image and sound. Here's a link (http://www.youtube.com/v/gk3Dk_R-028) to a video I just put up on You Tube of today's ride.
I've had several versions of this. It comes in two versions, holding 30 minutes or 60 minutes. It's so simple to use that there's no excuse not to video your rides. Fits into a jersey pocket and weighs less than some cell phones.
