Clydesdales/Athenas (200+ lb / 91+ kg) - Planning for my first metric

I'll be taking part in a metric century on the 14th and now that it's less than two weeks away I wanted to get some input as to how to be ready. I've got the miles under me (over 400 for the season, 300 of those in May) and I don't think the distance should be a huge problem as I have been hitting 30+ on a regular basis with relative ease and those rides have been at around 17.5-18.5mph. I'd like to get one 40 mile ride in prior to the event just to stretch it out a bit but other than that I feel ready.
I don't plan on riding that fast for this event, I was thinking 15-16mph, find a middle group and just stick with them.
My primary question is about the week of the ride...how much should I ride prior? Should I take two days off before? 3? a short ride then 2? Thanks in advance.

Really? Do you mean a consecutive 62 miles or 62 miles for the week? I've heard that if you can comfortably cover about 2/3's the distance you should be good to go.
