I am having a difficult time opening them is there some kind of trick to this my tektro on my other bike seems a lot easier to release.

I have my cable set so I can loosen the adjuster barrel in the lever to be able to open them

The unhookable end of the stradle cable has the usual cylindrical-shaped head. Try rotating the cable 90° when you're attempting to maneuver it out of its slot. This generally gets me juuuuust enough extra clearance.
