I bought my bike there as well. I just checked, the site does say that specs can change without notice, but if that's the saddle you had in mind, it's a little different than changing brake levers. A lot more comfort related. Ask them to swap it out, you send yours, they send you the Cervelo. They should definitely do that. They are likely out of stock though, so you may have to wait.

But definitely call them to explain

sounds like a disupte to the credit card company, if they don't fix the issue

Give them a call. You'll likely get a lot farther talking to someone in a calm and rational way than with an email that can't convey your tone or intent. If you're a repeat customer, and you state your case that you really just want the saddle that was advertised and what can they do to help you out, I'm guessing they'll make it right. They know saddles are a very personal choice, and not interchangeable. Good luck.

To be honest, it's not great but I don't think they conned you or anything.

I just wish I could get a P2C.

My only problem now is that I have no excuse for a slow bike split!

Consider yourself lucky already.
For a while no one knew what fork Cervelo was even sending them with their bike.
The parts spec has been all over the place.
Check out Cervelo's site.
