A friend that I work with created this map (http://maps.google.com/maps/ms?ie=UTF8&hl=en&msa=0&msid=101951734338835803384.00044eb3b39bebe68d7e8&t=h&z=12) on google.
I normally due the 17 mile version right now. I have never done 31 so I can't speak for it, but the 17 is a nice after work ride for us.

There are some really great new trails going in on the other side of the river, too.
If you ride across the 71st Street Bridge, you can ride up a trail that goes parallel to the Arkansas on the OTHER (West) side of the river, and cross again at either the pedestrian bridge or the 21st street bridge (just watch out coming down the ramp on the east side - unclip, if you're clipped in).
Also, out south, there are some good, traffic-free roads in South Bixby and Glenpool that are nice. Down Mingo to about 171st Street, over a few miles to Elwood, and through Jenks to the 96th Street Bridge.
Let me know if this sounds good and you want more detail.

Besides the trails on riverside, Chandler park and Mohawk park are a couple more places to check out riding. Lots of cyclists ride to Chandler and back, on early weekend mornings.
I no longer live in Tulsa, but I believe the MUP at 41st & Riverside is closed, due to a construction/MUP project.

The Creek Turnpike Trail runs along Creek Turnpike from South Tulsa up to NSU Broken Arrow. The trail has been under construction but is now fully open. The only traffic you deal with is at crosswalks with stop lights. Here are some places you can park to get on the Creek Turnpike Trail:
Between 91st & 101st on Sheridan just south of Creek Turnpike (gravel parking lot on east side of road)
Between 91st & 101st on Memorial just south of Creek Turnpike (Memorial Creek apartments parking lot)
Between 91st & 101st on Garnett under the bypass
You will see other parking lots as you head east along the trail from the locations I mentioned above.
The Creek Turnpike Trail also connects with the Riverside Trails mentioned in previous replies. The trails connect just south of the Main St/96th/Delaware & Riverside/River Rd intersection. This connection is easiest to find if you're riding west on the Creek Turnpike Trail and want to go north on the Riverside
Also, here is a helpful website with lots of other riding ideas.

On the trails, you won't get nailed by a car. But, you might get JACKED by gangbangers. Trails are where I'd go to make some easy money jacking someone's high-dollar ride. I usually roll Memorial during rush, because that's where all the witnesses are.
Don't forget about the Osage trail from OSU-Tulsa to Skiatook. Good for about 15 miles one way (not sure I'd take it after dark, though...).
Also, the Katy trail to Sand Springs. About 8 miles. Toughest crossing is at the Gilcrease Museum Rd. Between that hill and the on ramp to Eastbound hwy 412.
