I was thinking about converting an old bike of mine (a hybrid type of bike) into a "Sting Ray" type of bike
would a normal bike be able to accomodate a banana seat and ape hanger handle bars?
yup, as long as the frame is rigid, if it has a rear suspension you you might need to figure something out. but the parts are pretty much universal.

my trek 7100 multitrack has a seat post that handles a seat with rails... will this work for a banana seat?
I want to keep my gears, do I have to change anything to handle the sissybar?
I want some chopper style handle bars, not sure if I want the ape hanger bars or something a bit smaller from the BMX area... would I need to change the stem to allow for that? and would the handlebars fit the existing grip shifts and brake levers?

you'll need a new seatpost to handle a bananna seat and the right size sissy bar for your frame, but you should be ok otherwise.
Just check the diameter on your existing handlebars, chances are you can get new bars of the same diameter and not need to change the headset. and the brakes and shifter should fit fine, but you may have to contend with cable length issues if you switch to big apes.
man apes would be cool as hell. I've been thinking about doing exactly what you're talking about to my trashed MTB. Nanner seat and some big ape hangers...could be really unique

I did this, and it was cool, but be aware that most sissy bars on the market are designed for 20" wheels, and whilst they'll clear 26"ers, they don't get the seat up real high. Mine was stolen, and when I do it again (I've GOT to do it again), I'll make my own sissy bar.
