Heading to Stone Harbor in 2 weeks. Looking for a low key road ride - 25 - 30 miles. Any Jersey shore people here with suggestions?

You can venture north on Ocean Drive, which will give you a scenic ride. Very flat of course. With your scenic ride comes a slew of tourists driving, practice caution. Thru Ocean city to it's very Nothern Point is the Gardens bridge, cross it and it can take you West back thru Somers Point, across the Beesley's Point bridge (closed to car traffic now but nice to ride across) and into Cape May County.
Or from the Gardens bridge you can cross into DOwnbeach/Absecon Island (Longport, Margate, Ventnor and AC). Absecon Island loop is 13 miles. If you ride before 10 am you can ride the boardwalks in Ventnor and AC. I'd avoid most riding on Ocean Drive or Absecon Island on the weekends in summer.
I do most of my riding during the week.
Your other option is to leave the island, cross the GSP and route 9 and into Cape May COunty.

I'm down in Stone Harbor most weekends in the summer and depending on how much time I have to ride, I sometime just travel up Second Ave, through Avalon, into Sea Isle and keep following the coast into Ocean City. You can then either turn back and return the same way, or venture inland and come back down Rt 9.
If I have more time I will do this loop (or a variation of it) http://www.bikely.com/maps/bike-path/Stone-Harbor-Cape-May-Loop. Rt 9 can be busy depending on the time of the day, so you might prefer to move over to the side roads to avoid the traffic.
It's also hard to get lost since there are only a couple of main roads and if you can get back to Rt 9, you can easily find your way back to Stone Harbor.

The Cape May loop looks perfect but where can I get it written out by route/road? I'm not familiar with BIKELY.

I don't have the cue sheet written out, but if you just "zoom in" you can figure out the turns and road names. It's pretty easy, and hard to get lost if you stay on the main roads. You can easily avoid Rt9 which can get busy but using the roads that run parallel to it all the way to Cape May.
