my local store are selling them cheap (Balance Bars), if I store them at room temp how long before they go bad?
Expiration dates are a scam. Perhaps your question calls for some experimentaion!

They seem to last forever, but the older they get, the more determined you have to be to eat it.

Freeze them?
I've eaten some pretty old bars (a year or so out of date). I would not do it again.

Years ago I was on a group ride and one of the riders opened an old Powerbar and found that it had added protein - maggots. I don't know how out of date it was, but I now stick to the date.

I'd like to know how long after u eat one does it start to help and how long after that do they last?

I'm not sure I'd know and expired energy bar if I tasted one. Maybe if it tasted good I'd know something was wrong.
