I'm down on the Outer Banks and my wife and I have been riding every morning. It is flat and the roads are smooth so it is easy riding. The other day we did 60 miles (with a break for lunch). That was a first for both of us. It wasn't bad at all, although I'm not sure I want to tackle a century.

The US just has to join the rest of the world and use proper measurements and you've done your century. :D 60 miles equal 100 kilometers

I'm thinking you can do a century. Don't sell yourself short. Congrats on the 60.
Congratulations! If you're interested at all in doing a century, just gradually add a few miles and see if you enjoy that distance. If so, add more and check again. If you reach a distance that is no longer fun, then ask yourself if completing a century is really that important to you. If so, then go for it.
I'm still slow.... the more I think about it, I really don't know if I want to spend 8 hours on a bike. But the hot weather we're having might be clouding my thinking.

As others have said, if you're contemplating a century, start adding a few miles now and then.

If you can do 60 you're ready to handle the century.
In our area we have a century ride on the local trails and another that is held on roads with the biggest climb being the interstate overpasses. They're both great choices for doing your first century. The trail actually has more hills than the road event.
