What are some good LBS in the Orange County area. Let's stay away from chain stores, unless there's one particular store in a chain that just blew your socks off in customer service.

What are you looking to buy? Unfortunately, there is no one "all around" store. (if there is, I haven't found it.)

Santiago Cycling (http://www.cyclingpros.com/index.htm) but then again I'm bias. Sand Canyon Cyclery (http://www.sandcanyoncyclery.com/)is good too. Switchback Cyclery (http://www.switchbackcyclery.com/)is good for mtn, nice family owned shop. The Path (http://www.thepathbikeshop.com/)is good for mtn too.

I'll second Sand Canyon Cyclery. I would stay away from Edge. It is a bike shop nearest to my house. I have been there twice and regretted I didn't learned my lesson the first time. Not just bad customer service but insulting and arrogant one. Adrenaline in Orange is a good shop too.

I'm really sorry to hear that you had a bad experience at Edge. They have been my go-to bike shop since 2004 and I have nothing but the highest opinion of them. The staff would be very disappointed to know that they came across as arrogant. That is not the shop that they want to run.
I will say this, they have a lot of regulars and people like...well...me, often inadvertently tie up the staff while others are waiting and getting impatient.
If you would like to pass along why you feel that way, I will be more than happy to communicate it to them. Just to be clear, I have no affiliation with Edge except for the fact that I am a loyal customer and I want to see them succeed.

Anyone have any experience with Rock n' Road Cyclery? I know I said no chain stores, however the one I went to treated me fairly well. Also it's not too bustling (busy) so I am usually able to chat with the manager and pick his brain a bit.

Nothing but good experiences for me at the Irvine, Mission Viejo, and Laguna Niguel stores.

The one in Anaheim Hills is pretty cool, but it's expensive. For that reason, I usually go to Jax in Yorba Linda. The "Anaheim Hills Bike Shop" off of La Palma sucks.
king's in seal beach. small staff, incredibly knowledgeable. don't see much MTB stuff there, but they have a great selection of track and road bikes. mostly bianchi and look.

I feel the same thing with Rock n Road Anaheim Hills. Hopefully I'll develop a good relationship with them. But I am exploring alternatives for now, just to reassure myself that I am comfortable with RnR AH.

The Path in Tustin, especially for mountain bike gear.
King's used to have a few fools there, but seem to have gotten it together recently.
Jerx will always be Jerx, whether in Fullerton or HB. They are the suck.
