Does anyone know of a page describing some actual set-ups used by TDF riders? I'm not looking for brands, but rather the cassettes & chainrings used for a climbing stage vs. what they use on a TT during a stage race.
I don't race much and aren't looking to copy them, I'm more just curious what kind of gears they push on various stages.

bikeradar.com or cyclingnews.com tech section (essentially the same thing).
You'll get a lot of stuff about which brands they use, but also some individual stage setup things. For example Remy DeGrigorio mentioned that he went to a 25t large cog for Hautacam, compared to his usual 23.

I would be surprised to see anyone pushing bigger than a 25 in the mountains, if that, but I am curious to know also.
