If I ride a 172.5mm crank on my road bike, would I use the same length on a cross bike?
(I use 175mm on my mountain bike)

I guess it would depend if you're a "spinner" (172.5) Or a "masher" (175). But really look at a measuring tape and see how much you of a difference you are talking about. Remember, we are talking millimeters, not centimeters.
i have 170 mm on my roadie and 172.5 on my 'crosser. i find the extra 2.5 mm actually makes a substantial difference. it depends on what you use the bike for, but where i race, there's damned little spinning. mostly grinding through the mud.
