I recently picked up a Brooks flyer. If I break it in while riding more upright, and later switch it to a touring bike, will it fit equally well for either style of riding?

The more upright you sit on the saddle the more pressure you are putting on your sit bones, which translates into deeper dimples in the saddle.

That said, it should work fine. However you may have some hammock feeling to the saddle if you take it from one extreme riding position to the other, but it will configure itself to whatever bike you decide to keep it.

If you are planning on continuously swapping it between bikes, I would recommend you save up and buy each bike its own saddle.

I started on my more upright touring and tried moving it to my road bike (Brooks B17). Didn't quite fit right. I ended up biting the bullet and bought a Swift.

The Brooks Champion Flyer is designed for a more upright riding position so if your other bike has a fairly aggressive position you may not find it comfortable on that bike.

I've got a Champ Flyer, it's the same top as a B17, but it has springs (which don't effect the positon one rides, they just make that ride softer). The B67 is the more upright saddle.
