Would this be a good combo? My bike is already a BEAST. Would this make it too heavy AND.....Which one should I choose from these two. I can't tell the difference.

Don't worry about the weight of the Xtracycle, after all the whole point of getting one is so that you can... wait for it... carry even more weight on your bicycle! That's why they invented gears after all ;)
If you Trek has 26" wheels, get the 26" wheel version of the Xtracycle. If it has 700c wheels, get that version. The only difference between the two Xtracycle kits is the location of the brake bosses. You can look at your bike tires and see what's printed on them, or look up the specs for the version of the bike you own to determine which wheel size yours uses. I suspect it's 26".
